We not only aim to sell meat and offal but also to consider the kinds of meat that we ourselves and our families would really like to eat. So we have come to the considered conclusion that lean meat should be selected according to our own strict standards of producer, cattle farmer, pedigree and feed. We take care to use heifers of over 30 months in age (normal age is 27 months) and put the emphasis not on objective factors (e.g. this is a branded A5 cow) but on the quality of the meat and fat. It's the A4–A3 grades of beef that have the highest quality and lowest melting point.

After considering the best way to cook these croquettes for a delicious result, we eventually decided that freezing them before frying and offering them frozen was best.
